These are the scones and strawberry cake i made~

It's been a long time since i have updated due to busy working!~

Just a notice that i am FINALLY enrolling myself to @Sunrice Academy!

That means i'll be studying for a pastry and baking diploma~

Yeah for me!~ that would be happening next year!

i will use this blog to track my new and exciting life at school and work.

thats the name of the cafe~ i like the napkin lolzx

this was the display case~

the left was mont blanc and the right was chocolate mousse cake~
the mont blanc was nice and creamy~ it had a mild taste of chestnut in it~
the chocolate mousse was crumbly instead of smooth~ >.< but it was rich and slightly bitter but i like bitter chocolate. so it was not bad~

lolx since we did the macrons eariler we took it out to compare with the one on the cake!!!

i drank cafe latte!~ yumyum!~ eventhough it was nearly midnight.... lolx!~

Macron baking lessons

Yo Mina san!~

for part 2 of my sister birthday was baking lessons from lynn!

It was her surprise birthday present!~

when i took her to the location, she was like why are we here and why are we meeting someone she doesn't know?? lolx i should have taken photos of her face then~ oh well!~

Lynn started teaching us and it was really fun!~
she gave us tips about the macrons and told us some precautions to take.
since it is a lesson so i will not disclose any of it~

Lunch at carousel

hello~
For part of my sister's birthday celebration, we went for the carousel lunch buffet~
here are some pictures of desserts at the buffet~
if i remembered correctly, from the top left to the bottom right of the 1st picture consists of
pandan tiramisu
i think the yellow one was passion fruit with mousse
hazelnut with chocolate mousse and mini crunchy chocolate balls inside
the one with the white chocolate ball was raspberry jam and vanila mousse
i cant remember the one in the bottom middle but i think it was milk chocolate...
lastly, the strawberry jam with vanila mousse.
for the 1st picture, let's just say that they LOOK really pretty but the flavors were not quite there...
For example, in the pandan tiramisu it didn't taste anything of a tiramisu as there were no sponge inside but just pandan flavored mousse(felt like just cream) and personally i don't fancy too much mousse~
as for the ones with the jams, all i can say is that, jam was all that i taste... it was too sweet for my liking~

the next picture consists of ( if i remembered correctly...)
the tart above was cheese tart
the one in the bowl was coffee creme brulee
the red beside the yellow was raspberry cake
the yellow was passion fruit cake
the one that looks like it's red was just covered in cocoa powder so it's chocolate cake
the black one was green tea opera cake
and the last is another cheese cake~
well, the one i enjoyed the most was the coffee creme brulee!~ yummy!~ it was smooth and the sweetness was just nice with a touch of coffee, it was not overwhleming but blended into the dessert perfectly~ yum yum!~
however the green tea opera was a disappointment.
when i think of opera, i recall the crispy chocolate bottom layer with a blend of intense coffee taste with earthly hazelnut butter cream layered in between the sponge cake and topped with a shiny layer of ganache~ ( i have helped my colleages with it at deli before)
so i mean there should be atless some slight resemblance in taste right?
i mean the picture looks alittle like it. but when it went into my mouth, it was like mousse and little bit of sponge but no green tea taste at all... end of story...

the rest was normal~
well, it's just my opinion, don't just hear it from me!~ go and try it out yourself!~

the whole thing inculding the mains cost $37++
and go early as we heard from the waiter it is mostly booked in advance~
for me, the main course section was abit limited for 37bucks~
maybe we should have tried dinner instead.~
however i must say the service was REALLY good~
they clean stuff like in a blink of an eye and very friendly!~

hello!~

this is my latest update!

the lightly brown cookie that you see above is peanut caramel (given by my colleage in the photo above), wanut and chocochip cookie while the dark black cookie is my sister's creation. it consists of chocochip with

bits of white macron, the texture is slightly different from mine. it's softer and more chewy than crispy.

hi!

random post of pictures today.

this chocolate bar is given by my church friend who just got back from japan and i thought the packaging looked cute so it's here on my post. It taste abit like rice puff covered wth good quality chocolate.she gave us some other sweets but we opened it on the spot and shared so no photos...>.<>

The bunch of flowers in the cup are jasmine flowers, my colleage gave them to me for tea!~

if you like jasmine tea then you should try it, it's really just jasmine and without the greentea.

it's sweet and alittle bitter aftertaste~

tiramisu and brownies~

My dish was swallow so i couldn't layer the chocolate in between so i put it on top... as u can see!~ lolx just trying out this new recipe as i was craving for some tiramisu but did not want it to be too heavy.

I made this tiramisu from this recipe. It's very easy to make~ just whip it all up~
but i did made some changes like instead of finger sponge i used brownie cake ( i added almond flour so it became cakey) and i added Bailey's Irish cream into the mixture instead of Brandy or Rum.

here's the recipe i took off the internet~ forgotten which site =p sorry dude~

Feather Light Tiramisu

Ingredients

Strong cold espresso coffee, 3tbs (tablespoon)
Vanilla Extract, 1 teaspoon
Brandy or Rum, 1 tbs
Vanilla Sugar, 1/3 cup(just stick vanilla pod into a jar of sugar and leave it for 2-3 weeks for flavor, simple!)
egg whites, 2 (if you don't want raw eggs in your recipe, try using cream)
Reduced fat cream cheese 8oz (about 221g) softened
Reduced fat creme fraiche or plain greek yogurt, 1/2 cup
Lady fingers AKA sponge fingers, 18
Dark chocolate, 2oz grated (just enough to cover the surface)

Directions

Mix together the coffee, vanilla and brandy in the bowl.
In a 2nd bowl, beat sugar and cream cheese together.
In a 3rd bowl, whisk the creme frachie/ yogurt untill it;s just holding it's shape, then fold it into the cream cheese mixture.
Using a clean bowl, whisk the egg whites untill it forms soft peaks.
Fold the egg white into the cheese mixture.
break the sponge fingers into pieaces and place them on the bottom of 6 glasses.
drzzle half of the coffee mixture onto the sponge in the glasses.
Spoon on half the cream mixture and sprinkle with grated chocolate.
Repeat this and layer it with the rest of the ingredients, finishing it off with grated chocolater or cocoa powder.
chill untill firm and serve within 24 hours.

serve 6

Nutritional Information: each serving is 282 calories and 12g of fat. (that is if u follow everything stated w/o brackets)

well i certainly didn't so who knows how much we have it down our system. i hope my friends that ate that don't see this! >.<>

btw my sister say it taste abit sour for the yogurt so u may wanna reduce the yogurt by abit. but hey i'm not complaining~ so it really depends~~

hi~

while i was looking through photos in my email, i came across some of my old creations~

the 1st is doriyaki!~ the savory pancake with red bean paste which doremon (cartoon) likes to eat =)

next, is cream cheese base tarts with custard topped with raspberries and blue berries.

the other set has abit of tropical touch, custard filled tarts with mandarin oranges and strawberries.

so i thought to share with you all~ i apologize for some of the poor quality of photos are are being shown~

it will not happen again with my new camara!!!~

hi! guess what??

i got a new 8mega pixel camara from my sister for my upcoming birthday(in like 2mths time)!!!!

yah!! that's right! it means more photos coming up!!!! weee!!!!

cream puffs and brownies

hi~
i made cream puffs and brownies for a friend's house warming~

these are custard puffs and double chocolate with nuts brownies.(they bought vanlia icecream to accompany the brownies~

I saw the tlies on my table and thought it would look interesting if i added them in the photo so there it is.

i need to start doing some photo shop when i'm free~ (the brownies don't look that nice so more puff pictures!)

my sis took back her camera so i cant update anymore new photos if i bake for now~

i'll see whether i can get her to lend it to me again!~ =p

Fruit tarts

this week i was working on fruit tarts. it's a basic sweet pastry base, confectionary's custard with crushed caramel cashew nuts and fresh fruits. i used orange and korea strawberries, any citrus fruit will do the trick as it cuts the sweetness of the tart base. the white stuff on top of the c The custard is a bit runny as i did not follow the recipe to add in chocolate which was suppose to sticken the custard. lesson learned. if any one is interested in the recipe pls let me know and i'll put it up. i got it from a recipe book but i could not remember the name, if i am correct it has to do with sinful desserts or something... oppz... sorry author!~

what is dessert?
well, the wikipedia states that
Dessert is a course that typically comes at the end of a meal, usually consisting of sweet food but sometimes of a strongly-flavored one, such as some cheeses. The word comes from the Old French desservir, "to clear the table." Common desserts include cakes, cookies, fruits, pastries, ice cream, and candies.

however, my own meaning is just simple and some may even say naive.
it means something to be enjoy and savor the sweet tasting food with others.

dessert brings people togather, to enjoy the day with each other and savor the moment of sweetness and company.

when one thinks of dessert, surely it's something nostalgic like the aromatic smell of butter lingering in the air that tells you of something is baking in the oven. the anticipation of what to come.

it's more that just something to eat at the end of a course, it's a lifestyle.
it's something that surrounds us everyday, the smell from the bakery next door to the taste of the soft fluffy cake at someone's birthday bash. From celebration to the cafes with delightful slices of cakes and desserts on the window panel or the frige at the corner.you can see little children on the street with cookie bags from cookie stores and on the go icecream on a hot sunny day.

oh well, i could go on and on...

On the cross road in my life, at the age of 21 ( what an age!) cooking for others is a joy that cannot be explained. it's a passion that should be taken seriously, no matter how hard you have to work in the kitchen and effort you have to put in to make it successful. the reason not many would do it cos it's just too troublesome if you are half hearted but if you go all the way it will be very rewarding. many say don't do it for a job cos it does not pay that well for a start.. so i think passion is the only thing to keep ya going..

so this is why i started my food blog, to share with others and have fun of course!~ wee~ here i come!~
